This fried rice features cooked turkey, colorful vegetables, and fluffy rice stir-fried together in a savory sauce. The recipe takes about 30 minutes to prepare and serves 4 people.

Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 cup cooked turkey, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers, etc.)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Oil for cooking

Instructions

  1. Prepare the Ingredients: Gather all ingredients and have them ready to go.
  2. Heat the Oil: In a large skillet or wok, heat a tablespoon of oil over medium-high heat.
  3. Cook the Eggs: Pour in the beaten eggs and scramble until fully cooked. Remove from the pan and set aside.
  4. Sauté Aromatics: In the same pan, add a bit more oil if needed, then sauté the minced garlic and chopped green onions until fragrant.
  5. Add Vegetables and Turkey: Stir in the mixed vegetables and diced turkey, cooking until heated through.
  6. Add Rice: Add the cooked rice to the pan, breaking up any clumps. Stir well to combine with the turkey and vegetables.
  7. Season: Pour in the soy sauce and sesame oil, mixing everything together. Season with salt and pepper to taste.
  8. Finish: Add the scrambled eggs back into the pan, stirring to combine. Cook for another minute until everything is heated through.
  9. Serve: Remove from heat and serve hot, garnished with additional green onions if desired.
