Ingredients

  • For the Spiced Cake:
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • For the Pumpkin Pie Layer:
  • 1 can (15 oz) pumpkin puree
  • 1 cup sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • For the Pecan Pie Layer:
  • 1 cup pecans, chopped
  • 1 cup corn syrup
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Make the Spiced Cake: In a large bowl, mix together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. In another bowl, whisk together oil, eggs, vanilla, and buttermilk. Combine the wet and dry ingredients until just mixed. Pour half of the batter into the prepared cake pan.
  3. Prepare the Pumpkin Pie Layer: In a separate bowl, mix pumpkin puree, sweetened condensed milk, eggs, cinnamon, ginger, nutmeg, and salt until smooth. Pour the pumpkin mixture over the cake batter in the pan. Top with the remaining cake batter.
  4. Bake the Cake: Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan.
  5. Make the Pecan Pie Layer: In a bowl, combine chopped pecans, corn syrup, brown sugar, eggs, vanilla, and salt. Once the cake has cooled, pour the pecan mixture over the top of the cake.
  6. Bake Again: Return the cake to the oven and bake for an additional 25-30 minutes, or until the pecan layer is set. Let cool before slicing.
  7. Serve: Slice the Piecaken and serve with whipped cream or vanilla ice cream, if desired.
