This smash burger features seasoned beef patties smashed onto a hot grill or skillet, topped with melted goat cheese and rich caramelized onions. The preparation time is about 30 minutes, and the recipe serves 4 people.

Ingredients

  • 1 pound ground beef (80/20 blend recommended)
  • 4 ounces goat cheese, crumbled
  • 2 medium onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 4 burger buns
  • Lettuce and tomato slices for topping
  • Optional: hot sauce or aioli for serving

Instructions

  1. Caramelize the Onions: In a skillet, heat olive oil over medium heat. Add sliced onions and 1/2 teaspoon salt. Cook, stirring occasionally, until onions are soft and golden brown, about 15-20 minutes. Set aside.
  2. Prepare the Beef: In a bowl, mix ground beef with smoked paprika, remaining salt, and black pepper. Divide into 4 equal portions and shape into loose balls.
  3. Cook the Burgers: Preheat a cast-iron skillet or grill over high heat. Place the beef balls on the hot surface and smash them down with a spatula to form patties. Cook for about 3-4 minutes until a crust forms, then flip.
  4. Add Cheese: After flipping, immediately top each patty with crumbled goat cheese. Cook for an additional 2-3 minutes until the cheese is melted.
  5. Assemble the Burgers: Toast the burger buns if desired. Place the cooked patties on the bottom half of each bun, top with caramelized onions, lettuce, and tomato slices. Add any additional sauces if using.
  6. Serve: Close the burgers with the top half of the buns and serve immediately with your favorite sides.
