This French toast bake features layers of bread soaked in a custard mixture, combined with fresh blueberries and mascarpone cheese. It takes about 1 hour from start to finish and serves 8 people.

Ingredients

  • 1 loaf of brioche or challah bread, cut into cubes
  • 2 cups fresh blueberries
  • 8 ounces mascarpone cheese, softened
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter for greasing the baking dish
  • Maple syrup for serving

Instructions

  1. Prep the Baking Dish: Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter.
  2. Layer the Bread: Place half of the bread cubes in the bottom of the prepared baking dish. Spread half of the blueberries and half of the mascarpone cheese over the bread.
  3. Mix the Custard: In a large bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Combine: Pour half of the custard mixture over the layered bread, then add the remaining bread cubes, blueberries, and mascarpone. Pour the rest of the custard mixture over the top, pressing down gently to ensure the bread absorbs the liquid.
  5. Chill: Cover the dish with plastic wrap and refrigerate for at least 30 minutes or overnight for best results.
  6. Bake: Remove the plastic wrap and bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the custard is set.
  7. Serve: Allow to cool slightly before slicing. Serve warm with maple syrup drizzled on top.
