
I made these for the first time on a whim, mostly because I had leftover brie from a cheese board, a container of blueberries about to turn, and a bag of jalapeños I’d bought with vague intentions I never followed through on. I figured worst case, it’d be a weird experiment nobody finished. Instead, they vanished before the rest of dinner was even ready, and I’ve been making them on purpose ever since.
There’s something about the combination that shouldn’t work on paper but absolutely does — the sweetness of the blueberries, the creamy richness of the brie, the sharp heat of the jalapeño, all of it wrapped up and crisped in bacon. It’s the kind of appetizer that makes people pause mid-bite like they’re trying to figure out what just happened, in a good way.
Why This Combo Actually Works
Jalapeño poppers on their own are great, but they can get a little one-note — heat, cheese, done. Adding the blueberry brings a fruity sweetness that plays against the heat instead of just sitting next to it, kind of like how a good hot honey works on pizza. Brie melts so much smoother than cheddar or cream cheese alone, giving you that really luxurious, almost sauce-like texture inside each pepper. And bacon wrapped around the whole thing ties it together with crunch and smokiness.
They also just look impressive. If you’re bringing an appetizer to a gathering and want something that photographs well and gets people talking, this is it. Nobody expects blueberries at a jalapeño popper party, and that’s exactly the point.
What You’ll Need
10-12 jalapeños, halved lengthwise and seeded
8 oz brie, rind trimmed, cut into small chunks
1 cup fresh blueberries
2 tablespoons honey, plus more for drizzling
1 teaspoon lemon juice
6-8 slices bacon, cut in half
A pinch of salt
Toothpicks, for securing the bacon
How to Make It
1. Make the quick blueberry compote. In a small saucepan over medium heat, combine the blueberries, honey, and lemon juice. Cook for about 8-10 minutes, mashing some of the berries as they soften, until it thickens into a jammy, spoonable compote. Set it aside to cool slightly.
2. Prep the jalapeños. Halve them lengthwise and scoop out the seeds and membranes with a small spoon. Wear gloves here if your skin is sensitive — I learned that lesson the hard way after touching my eye about twenty minutes later.
3. Preheat the oven. Set it to 400°F (200°C) and line a baking sheet with foil for easy cleanup, since the bacon grease and blueberry compote both love to make a mess.
4. Stuff the peppers. Tuck a piece of brie into each jalapeño half, then top with a spoonful of the blueberry compote. Don’t overfill — a little goes a long way, and you want the bacon to still wrap around comfortably.
5. Wrap in bacon. Wrap each stuffed pepper half with a piece of bacon, securing it with a toothpick if needed to keep it in place while baking.
6. Bake. Arrange the poppers on the baking sheet and bake for 20-25 minutes, until the bacon is crisp and the brie is melted and bubbling at the edges. If your bacon isn’t as crisp as you’d like by the time the peppers are done, pop it under the broiler for a minute or two — just watch it closely so it doesn’t burn.
7. Finish and serve. Let them cool for a few minutes (that filling holds heat), then drizzle with a little extra honey and serve warm.
A Few Notes From Trial and Error
Thinner bacon works better here than thick-cut — it crisps up in the same time it takes the peppers to soften, whereas thick-cut bacon often needs longer than the peppers can handle before they turn mushy.
I also tried this once with frozen blueberries in a pinch, and it worked fine, just added a couple extra minutes to the compote step since they release more liquid. Fresh is better if you have them, but don’t let it stop you from making these on a whim.
Fair warning: people will ask for the recipe before they’ve even finished chewing the first one. Make a double batch if you’re bringing these anywhere — they go faster than you’d expect.
