White Chicken Lasagna Soup

Creamy, hearty, and packed with all the flavors of white lasagna—but in comforting soup form! This one-pot wonder is perfect for cozy nights.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 lb boneless skinless chicken breast, diced
  • 6 cups chicken broth
  • 8 oz lasagna noodles (broken into pieces)
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Step 1: Prep Ingredients

Step 2: Sauté Onion and Garlic

Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent.

Step 3: Cook the Chicken

Add diced chicken and cook until browned and no longer pink.

Step 4: Add Broth and Boil

Pour in chicken broth. Bring to a gentle boil.

Step 5: Add Lasagna Noodles

Break noodles into bite-sized pieces. Add to the pot and cook for 8–10 minutes until tender.

Step 6: Add Cream, Spinach, Seasoning

Reduce heat. Stir in heavy cream, spinach, and Italian seasoning. Simmer for 5 minutes.

Step 7: Stir in Cheese

Add Parmesan and mozzarella. Stir until melted and the soup is creamy.

Step 8: Serve and Garnish

Ladle into bowls. Garnish with extra cheese or fresh herbs. Enjoy with crusty bread!
