Easy Burnt Basque Cheesecake Recipe

A burnt Basque cheesecake with a dark top and creamy interior, served on a wooden table with fresh berries.

This cheesecake features a smooth, creamy filling made with cream cheese, sugar, and eggs, baked at a high temperature to achieve its signature burnt top. The recipe takes about 1 hour from start to finish and serves 8 people.

Ingredients

  • 2 cups cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a 9-inch springform pan with parchment paper, allowing the paper to extend above the edges.
  2. Mix the Batter: In a large mixing bowl, beat the softened cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Then, add the heavy cream, vanilla extract, flour, and salt, and mix until fully combined.
  3. Pour and Bake: Pour the cheesecake batter into the prepared springform pan. Bake in the preheated oven for 25-30 minutes, or until the top is deeply browned and the center is slightly jiggly.
  4. Cool and Serve: Remove the cheesecake from the oven and let it cool in the pan for about 10 minutes. Carefully remove the sides of the springform pan and let the cheesecake cool to room temperature. Refrigerate for at least 2 hours before serving.
  5. Slice and Enjoy: Serve the cheesecake chilled or at room temperature. It pairs well with fresh berries or a drizzle of caramel sauce.
