Ingredients

  • 6 cups brioche bread, cut into 1-inch cubes
  • 4 large eggs
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup bourbon
  • 1 cup brown sugar for caramel sauce
  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream for caramel sauce
  • 1 teaspoon vanilla extract for caramel sauce

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Prepare the Bread: Place the brioche cubes in the greased baking dish.
  3. Make the Custard: In a large bowl, whisk together the eggs, heavy cream, milk, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Combine and Soak: Pour the custard mixture over the brioche cubes, pressing down gently to ensure all the bread is soaked. Let it sit for about 15 minutes.
  5. Bake: Bake in the preheated oven for 45-50 minutes, or until the top is golden and a knife inserted in the center comes out clean.
  6. Make the Caramel Sauce: In a saucepan over medium heat, combine brown sugar and butter. Stir until melted and smooth. Slowly add heavy cream and vanilla extract, whisking until the sauce is thickened.
  7. Add Bourbon: Remove from heat and stir in the bourbon. Allow the sauce to cool slightly before serving.
  8. Serve: Drizzle the warm bourbon-caramel sauce over the baked bread pudding and enjoy.
