These Linzer cookies are made with a buttery, almond-infused dough that is rolled out and cut into shapes. The apricot jam adds a fruity sweetness that complements the nutty flavor of the cookies. The recipe yields about 24 sandwich cookies.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar, plus more for dusting
  • 1 cup ground almonds or almond flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1 cup apricot jam

Instructions

  1. Prepare the Dough: In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy. Mix in the vanilla and almond extracts.
  2. Combine Dry Ingredients: In another bowl, whisk together the flour, ground almonds, and salt. Gradually add the dry mixture to the butter mixture, mixing until a dough forms.
  3. Chill the Dough: Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
  4. Roll Out the Dough: Preheat the oven to 350°F (175°C). On a floured surface, roll out one disc of dough to about 1/8-inch thickness. Cut out shapes using cookie cutters, and cut out centers for half of the cookies.
  5. Bake the Cookies: Place the cookies on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until lightly golden. Allow to cool completely on a wire rack.
  6. Assemble the Cookies: Spread a teaspoon of apricot jam on the solid cookies and top with the cut-out cookies. Dust with powdered sugar before serving.
