Ingredients

  • 8 cups sourdough bread, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 medium onion, thinly sliced
  • 2 cups mushrooms, sliced (such as cremini or button)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • 1/2 teaspoon salt, adjust to taste
  • 1/4 teaspoon black pepper
  • 2 cups vegetable or chicken broth
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Toast the Bread: Spread the sourdough bread cubes on a baking sheet and toast in the oven for about 10-15 minutes, until golden and slightly dry.
  3. Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized (about 15-20 minutes). Add the mushrooms and garlic, cooking for an additional 5-7 minutes until the mushrooms are tender.
  4. Combine Ingredients: In a large bowl, combine the toasted bread cubes, sautéed vegetables, thyme, sage, salt, and pepper. Pour in the broth gradually, mixing until the bread is evenly moistened.
  5. Transfer to Baking Dish: Spoon the stuffing mixture into a greased baking dish, spreading it evenly.
  6. Bake: Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, until the top is golden and crispy.
  7. Garnish and Serve: If desired, sprinkle with fresh parsley before serving.
