Easy Zucchini Fritters Recipe

Crispy zucchini fritters served with dill yogurt dip on a rustic wooden table.

These zucchini fritters are made by grating fresh zucchini, mixing it with flour, eggs, and seasonings, then frying until golden brown. The dill yogurt dip adds a creamy and tangy contrast, enhancing the flavors of the fritters. This recipe takes about 30 minutes to prepare and serves 4 people.

Ingredients

  • 2 medium zucchinis, grated and excess moisture squeezed out
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying
  • 1 cup plain Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Zucchini: Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture to prevent sogginess.
  2. Mix the Batter: In a bowl, combine the grated zucchini, flour, egg, Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat.
  4. Fry the Fritters: Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly. Fry for 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
  5. Prepare the Dip: In a separate bowl, mix the Greek yogurt, chopped dill, and lemon juice. Season with salt and pepper to taste.
  6. Serve: Serve the crispy zucchini fritters warm with the dill yogurt dip on the side.
